Chinese Shrimp and Almonds

Fish and Seafood Recipes

Yield: 4 servings

  • 1 pound shrimp
  • 1 cup cabbage, shredded
  • 1/2 pound mushrooms, sliced
  • 7-ounce package pea pods
  • 1 green pepper
  • 4 scallions
  • 1-2 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 1/2 cup slivered almonds
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 1 cup boiled rice
  • 2 tablespoons oil

Heat oil. Add shrimp and fry for 1 minute. Add shredded cabbage, mushrooms, pea pods, green pepper scallions and garlic, one at a time. Stirfry for 1/2 minute, after each addition. Add chicken broth and simmer at low heat for 4 minutes, until pea pods are tender. Add soy sauce and almonds. Lastly add 1/2 cup water mixed with cornstarch to thicken.
