Cinnamon Diamonds

Yield: Makes about 2 dozen.
- 1 cup butter
- 1 cup brown sugar
- 1 egg yolk
- 1/2 teaspoon vanilla extract
- 2 cups flour
- 1 teaspoon ground cinnamon
- 1 egg white
- 3/4 cup chopped walnuts
Cream butter and brown sugar; beat in egg yolk and vanilla. Stir together flour and cinnamon, and add to creamed mixture. Pat into an ungreased 10x15-inch baking pan. Brush with egg white. Sprinkle with nuts and press them lightly into the top. Bake at 350 degrees F for 18 to 20 minutes. Cut into diamonds while still warm.
