These cookies came from a dear friend and are so light and fluffy that they should really be called "Coconut Clouds." They go good with egg nog and are so simple to make!
- 3 egg whites
- dash of salt
- 3/4 teaspoon vanilla
- 1 cup sugar
- 1 7-ounce pkg. of sweetened coconut
Beat egg whites with salt and vanilla until soft peaks form. Gradually add sugar, beating until stiff. Fold in coconut. Drop by teaspoon onto a lightly greased cookie sheet. Bake in slow oven (325) about 20 min. They should be lightly browned. Let sit a minute before removing to a rack to cool. Not too long, however, as they may stick.
