Cracked Wheat Pilaf

Yield: Serves 4.
A nice change from rice and very good for you. Look for bulgur in health food stores and better supermarkets.
- 1 cup bulgur (cracked wheat)
- 1/2 cup chopped onions
- 6 tablespoons butter or margarine
- 2 cups beef or chicken stock, boiling
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Sauté dry bulgur in 4 tablespoons of the butter or margarine, stirring, until thoroughly coated. In the remaining butter, sauté the onion separately until soft.
Combine the onion with the bulgur and remaining ingredients in a casserole. Cover and bake 30 minutes in a 350 degree F oven. Stir gently with a fork. Cover and bake again for an additional 15 minutes.
At the end of the baking time, all the liquid should be absorbed and the bulgur moist but fluffy.
