Cranberry-Apple Slaw

Yield: Makes 6 servings.
- 12-ounce bag whole cranberries
- 1/4 cup orange juice concentrate
- juice of 1 lemon
- 6 large 'McIntosh' or 'Cortland' apples
- chopped nuts or raisins (optional)
In a food processor, blender, or meat grinder, coarsely chop or grind the cranberries, adding the orange juice concentrate and lemon juice until just blended. You can make this part of the recipe ahead and refrigerate until needed. Just before serving, core apples and shred them in a food processor or with a hand grater. Combine with the cranberry-orange mixture and toss until mixed. Add chopped nuts or raisins as desired. Serve immediately.
