Cream Sauce II

Yield: 1 cup
- 2 tablespoons butter
- 2 tablespoons flour
- 1 teaspoon onion juice
- 1 cup milk or half milk, half cream
- salt and white pepper to taste
- a pinch of nutmeg
Melt the butter over a low flame and stir in the flour and gradually add the milk. Add the seasonings and cook over low heat stirring constantly until the flour is thoroughly cooked. A thin sauce may be made by adding a little more milk.
