Curried Chicken Salad

Yield: Makes 6 to 8 servings.

  • 1/2 cup light cream
  • 1/2 cup plain yogurt
  • 1/2 cup mayonnaise
  • 2 teaspoons curry powder
  • 1 cup chopped apples (no need to peel)
  • 2 medium stalks celery, chopped
  • 1/2 cup slivered almonds
  • 3 to 4 pounds chicken, cooked, deboned, and shredded or cubed

Combine first three ingredients; then stir in curry powder. Add apples, celery, almonds, and chicken. Chill briefly.
