Diane's Hunter's Chicken

Yield: Makes about 8 servings.
The secret ingredient is the cloves!
- 4 pounds chicken breasts, cut into 1-inch-size pieces
- 1/3 cup virgin olive oil
- 2 onions, sliced
- 2 tablespoons butter
- 1 clove garlic, minced
- 3 whole cloves
Place the chicken pieces, in batches, into a plastic bag with a couple of tablespoons of sifted flour. Shake to cover the pieces with flour. Pour virgin olive oil into a frying pan and sauté the chicken until golden brown. In a separate frying pan, fry onions in butter with garlic, and cloves. When the chicken and the onions are ready, add the contents of both frying pans to a slow cooker. Then add the following:
- 1/3 cup tomato paste
- 1 cup sliced mushrooms
- 3/4 cup chicken stock
- 3/4 cup dry white wine
- 2 tablespoons brandy or 1/3 cup Muscatel
- 1 teaspoon salt
- 1/4 teaspoon white pepper
- 1 bay leaf
- 1/8 teaspoon thyme
- 1/8 teaspoon sweet marjoram
Simmer in the slow cooker for 3 to 4 hours and serve over pasta or rice.
