Yield: Makes 4 servings.
- 1/3 cup fresh lemon juice
- 1/4 cup virgin olive oil
- 2 tablespoons cracked black peppercorns
- 1 tablespoon chopped parsley
- 1 teaspoon salt
- 4 boneless chicken breasts, skinned
- lemon slices, for garnish
Combine first five ingredients. Pierce chicken breasts with a fork and pour the marinade over them. Allow chicken to marinate in the refrigerator for at least 30 minutes. Needed a little more cooking time, but the chicken was moist and everyone enjoyed it. It was an easy dinner and will be a keeper. – Anonymous Review
