Elderberry Blossom Fritters

Yield: 8 servings

Pour maple syrup or elderberry syrup, made from frozen elderberries, over these. Unbelievable.

  • 1 quart elderberry blossoms, with stems
  • 1 cup flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup milk
  • oil or fat for deep frying

Wash and gently dry blossoms. Sift dry ingredients together. Beat together egg and milk and beat into dry ingredients. Heat oil 1-inch deep in skillet. Dip blossoms into batter, holding them by stems, and drop into oil. Fry until golden. Drain and serve hot with syrup.
