Fava Beans with Garlic and Sage

Yield: Serves 4

Freshly chopped sage imparts its extraordinary flavor and aroma to this simply prepared dish of buttered fava beans. Serve with grilled veal chops.

  • 3 pounds fava beans, shelled
  • 3 tablespoons olive oil
  • 3 tablespoons butter
  • 2 garlic cloves, minced
  • 1 tablespoon chopped fresh sage
  • Salt and freshly ground black pepper

1. Bailor steam the beans until tender and then remove the outer skins. Drain in a colander.

2. Heat the oil and butter in a large skillet until the butter is melted. Add the garlic and sage and stir over medium heat until the garlic is tender. Add the fava beans and stir to coat. Season with salt and pepper and transfer to a serving dish.
