Yield: versatile, make as much or as little as you like
My family loves Chicken Parmesan, however with so many fresh tomatoes from my garden, I came up with this variation of a classic.
- Fresh tomatoes
- boneless chicken breasts
- olive oil
- Italian seasoning
- bread crumbs
- provolone or mozzarella cheese
- your favorite spaghetti sauce
Layer the baking dish with two layers of fresh tomatoes, drizzle with olive oil and sprinkle with Italian seasoning and bread crumbs.
Top with boneless chicken breasts, use more bread crumbs and Italian seasoning, cover with spaghetti sauce.
Bake for 45 minutes in a 350 degree oven, check for doneness of chicken breast with thermometer (180 degrees).
Remove from oven and cover with either provolone or mozzarella cheese, return to oven until the cheese melts.
Serve with garlic and butter angel hair pasta.
