Fried Chicken - First Prize 1998

Poultry Recipes

Yield: Serves 4 to 6.

  • 1 fryer, cut up
  • 1/4 cup honey
  • 1/2 cup undiluted orange juice
  • 1/2 cup water
  • 1 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup fine dry bread crumbs
  • 1/2 cup ground almonds

Mix honey with orange juice and water. In separate bowl, combine flour, salt, and pepper. Place breadcrumbs in a third bowl, and almonds in a fourth. Dip chicken pieces first in flour to coat them thoroughly, then dip into juice mixture. Then roll in crumbs to coat thoroughly, dip a second time into juice, and roll in ground almonds. Fry in one inch of clear oil at 360 degrees F, until crisp and cooked through.
