Fruit Salsa
Dips and Spreads Recipes
- 2 cups cherry or berry preserves
- 2 tablespoons lemon juice
- 1 red serrano or jalapeņo chili pepper, seeded and minced (wear rubber gloves)
- 3 scallions, root ends trimmed, finely chopped
- 2 tablespoons minced fresh mint leaves
In a small bowl, combine all ingredients and let sit about 5 minutes. Serve with tortilla chips or on top of roasted or grilled fish or chicken.
