Fruktsoppa (Fruit Soup)

Yield: 10 to 12 servings
A Swedish dessert soup that's easy to make and very good. Try serving it over vanilla ice cream, too.
- 1 box (8 ounces) dried apricots
- 1 box (6 ounces) seedless raisins
- 1 box (12 ounces) pitted prunes
- 4 to 5 apples, peeled, cored, and sliced in wedges
- 10 cups water
- 1 cup white sugar
- 1/4 cup quick-cooking tapioca
- Cream or whipped topping
In a large saucepan, combine the fruit and water. Bring to a boil and simmer for 30 minutes. Add the sugar and tapioca and simmer for another 15 minutes. Serve warm or cooled, with cream or whipped topping.
