Fudge Pie

Yield: Serves 10.

This is the most popular dessert with members and guests if the Galilee Beach Club. It tastes like a brownie.

  • 1/2 cup butter or margarine, melted
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup flour
  • 1 teaspoon vanilla
  • 1 square baking chocolate, melted
  • 1 quart vanilla ice cream, softened
  • Chocolate sauce

Combine butter and sugar in bowl of electric mixer, and beat well. Add the eggs and beat until creamy. Add flour and vanilla, and then melted chocolate. Mix well, and pour into greased pie pan. Bake 25 to 30 minutes at 325 degrees F. The pie will settle in the center. After it cools, smooth the ice cream into the depression in the center. Immediately cut into 10 pieces, wrap, and put into the freezer to keep until you're ready to serve. At serving time, spoon your favorite chocolate sauce onto the ice cream.
