Genesee French Toast

Yield: Serves 6.

There's nothing ordinary about this version of an old favorite. In fact, it tastes like a cheese danish. The inn slices its bread into 1-1/2-inch-thick slices, making about 12 pieces of toast from a loaf of French bread. To get 24 pieces, cut the bread into 3/4-inch-thick slices. —Genesee Country Inn, Mumford, New York

  • 4 eggs
  • 1/2 cup milk
  • 1/2 cup strawberry preserves
  • 1/2 teaspoon cinnamon
  • 1 to 2 tablespoons Grand Marnier (optional)
  • 12 slices day-old French bread, sliced on the diagonal
  • 12 ounces whipped cream cheese, at room temperature
  • 4 to 6 tablespoons butter

Combine the eggs and milk in a flat bowl and beat until blended. Set aside. In a small saucepan combine the preserves, cinnamon, and Grand Marnier and heat thoroughly. Make 6 or 12 sandwiches, using 2 slices of bread and whipped cream cheese for each. Dip the sandwiches into the egg mixture. Melt the butter in a nonstick frying pan and cook over medium heat until brown. Remove to a plate and spread liberally with the warm preserve mixture.
