Gingered Apple Cider

Serve hot as a warmup after raking leaves or as a refresher after a long walk in the woods on an Indian summer afternoon.
- 1/2 gallon apple cider (we prefer unpasteurized)
- 2 tablespoons freshly grated ginger
- 1 cinnamon stick
- 1 star anise pod
In a large saucepan over high heat, combine ingredients and bring to a gentle boil. Remove from heat and let steep 20 minutes (longer if you prefer more intense flavors). Pour through a coffee filter and discard solids. Reheat to desired temperature or cool to room temperature; then refrigerate.
