Glorified Rice Pudding

An old-fashioned treat adorned with whipped cream and maple syrup. --Old Town Farm Lodge, Gassetts, Vermont
- 3 cups milk
- 1/3 cup rice, rinsed (do not use quick-cooking rice)
- Pinch of salt
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1 envelope unflavored gelatin
- Maple syrup
- 1 cup whipped cream
Put milk in double boiler, add rice and salt, and cook, covered, until soft--about 45 minutes. Remove from heat and add sugar, vanilla, and gelatin, stirring to blend. Pour into a bowl and chill thoroughly. When ready to serve, top with syrup and whipped cream.
