Goat Cheese and Roasted Red Peppers Dip

- 8 ounces fresh goat cheese
- 3 scallions, roughly chopped
- 4 roasted red peppers
- 2 tablespoons chopped basil, plus extra whole leaves for garnish
- 1 large or 2 small garlic cloves, roughly chopped
- 2 tablespoons (approx.) extra-virgin olive oil
- Kosher or sea salt
- Freshly ground black pepper
In the bowl of a food processor, combine ingredients until smooth. Adjust seasoning. Transfer to a serving bowl and garnish with ribbons of basil.
