From The Country Innkeepers' Cookbook

Miscellaneous Recipes | Quickbreads, Coffee Cakes Recipes

Yield: Makes 2-1/2 dozen.

Try these freshly made with your morning coffee. A great way to start the day.

  • 2-1/2 cups sifted all-purpose flour
  • 1/4 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon mace
  • 1/4 cup corn oil
  • 3/4 cup milk
  • 1 egg, beaten

Sift the flour, sugar, baking powder, salt and mace together, then add the oil, milk and beaten egg. Stir with a fork until thoroughly mixed.

Drop by teaspoonsful into deep hot oil or fat at 375 degrees F. Fry until golden brown -- about 3 minutes. Drain on absorbent paper. Roll the warm puffs in sugar.
