Hartwell Farm Pickup Pancakes

Yield: 4 to 6 servings
Using "a little of this and a little of that," the Misses Fitch and Poor came up with this recipe, one of their favorites.
- 3/4 cup prepared waffle mix (any brand will do)
- 1/2 cup cornmeal
- 3/4 cup Bisquick
- 1 tablespoon butter
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1 egg
- 1/4 cup heavy crem
- 1-1/4 cups milk
Lightly grease a heavy frying pan or griddle and heat until a drop of water sizzles on the surface. In a medium mixing bowl combine all ingredients. Blend with a whisk or an electric beater just until smooth. Do not overmix.
Drop by spoonfuls onto the hot pan. Cook until bubbles form on the top, flip, and cook for 1 minute longer. Serve with butter and maple syrup.
