Healthier Coleslaw

Salads Recipes
Yield: Makes 4 servings.
- 1 cup grated carrots
- 1 cup grated cabbage
- 1/3 cup drained, mashed tofu
- 1/3 cup chopped scallions
- 1/4 cup dulse flakes (flaked kelp)
- 1 teaspoon lemon juice
- 1/2 teaspoon mustard powder
- 1/2 to 3/4 cup soy (or other) mayonnaise
Mix all ingredients and serve as a side salad or as a sandwich filling in pita pockets or tortilla wraps.
