Herb and Lemon Goat Cheese Spread

From The Yankee Cookbook

Dips and Spreads Recipes

This tasty spread can be prepared a day in advance and refrigerated. Bring it to room temperature before serving.

  • 4 teaspoons lemon zest (from 2 lemons)
  • 4 teaspoons chopped fresh thyme
  • freshly ground black pepper
  • 2 cloves garlic, minced
  • 1/2 cup soft fresh goat cheese
  • 1/2 cup soft cream cheese
  • 1/4 cup olive oil

In a small bowl combine the lemon zest, thyme, pepper, and garlic. Divide in half. Put half in a small mixing bowl with the two cheeses and mix well. Spoon the cheese mixture into a serving bowl. Add the olive oil to the remaining half of the herb mixture and spoon this on top of the cheese mixture. Serve with crackers.

This was a surprisingly good cheese spread. Very unusual. I used dried thyme in place of fresh, however I used half the amount. – Anonymous Review
