Honey-Juiced Chicken

Yield: Serves 2-4
- 1 broiler-fryer, cut in serving pieces
- 1 cup pancake mix
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup shortening or salad oil
- 1/2 cup honey
- 3/4 cup orange juice
- 1 orange, peeled and sliced
Coat chicken pieces in mixture of dry ingredients. In frying pan, shortening ready, brown chicken pieces. This will take 20-30 minutes. Pour the honey and orange juice, mixed, over the chicken. Cook covered at low heat for 45 minutes. Serve, garnished with warm orange slices and parsley.
