Honey-Mustard Dressing

- 1 teaspoon Dijon mustard
- 1/2 teaspoon honey
- 2 tablespoons white wine vinegar
- Salt and freshly ground black pepper, to taste
- 1/4 cup olive oil
In a medium bowl, whisk together mustard, honey, vinegar, salt, and pepper. Whisking rapidly, drizzle in the oil by droplets to form an emulsion. Add the carrots and toss to coat.
