Jared’s Cranberry Salad

Yield: Serves 8
Sweet, crunchy, and refreshing. Prepare in advance and refrigerate to give it plenty of time to set up. --Jared Coffin House, Nantucket, Massachusetts
- 1 cup cranberries
- 2 ounces sugar
- 1 cup mandarin orange segments
- 2 ounces chopped celery
- 2 ounces chopped walnuts
- Pinch of salt
- 3 ounces mayonnaise
- 3 ounces heavy cream, whipped
Marinate cranberries in sugar for 1 hour in a stainless steel bowl. Add mandarin orange segments, celery, nuts, and salt. Fold in mayonnaise and whipped cream. Refrigerate until set. Serve on a bed of lettuce garnished with orange segments and chopped nuts.
