Marjorie's Green Tomato Relish
Pickles and Preserves Recipes
Yield: 6 pints
- 24 green tomatoes
- 4 large onions
- 3 green peppers
- 3 sweet red peppers
- 3 tablespoons pickling salt
- 3 cups sugar
- 3 tablespoons mixed pickling spices, tied in a cloth
- 3 cups white distilled vinegar
Finely chop the tomatoes, onions, and peppers. You may use a food processor to chop the vegetables. Use the pulsing action so that the vegetables will be finely chopped but not puréed. Add the pickling salt to the vegetables and let stand for 1 hour. Then drain and add the remaining ingredients. Boil slowly for 1 hour.
Pack the relish into hot, sterilized pint jars, leaving 1/4 inch head space. Seal and process for 5 minutes in a boiling water bath. Cool and store in a cool, dry place.
