Minted Couscous

Cornmeal, Rice, Grains Recipes
Yield: Makes 8 servings.
- 2 cans chicken broth
- 3 cups couscous
- 1/2 cup toasted pine nuts
- 4 scallions, chopped
- 1/4 to 1/2 cup chopped fresh mint
- 2 tablespoons fresh dill
- 2 tablespoons lemon juice
Bring to a boil, remove from heat, and stir in couscous. Cover and let stand 5 minutes, then fluff with a fork. Add pine nuts, scallions, mintd, dill, lemon juice, and stir to mix.
