Puddings and Custards Recipes
Yield: 6 - 8 servings
This is my dad's mother's recipe. She always made it around Thanksgiving and Christmas. It is a real comfort food for me. After Nana died at the age of 100, I couldn't find her recipe and no one else in the family had saved it. I recently discovered it while cleaning out a kitchen cupboard. I hope you like it as much as I do.
Raisin Pudding
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1 tablespoon butter
- 1/2 cup milk
- 1/4 teaspoon vanilla
- 1/2 cup raisins
- 1/2 cup chopped walnuts or sliced almonds (optional)
In a small bowl, sift together first five ingredients. In a separate larger bowl, combine sugar and butter; mix well.
Add flour mixture to sugar and butter mixture, alternating with milk. The add vanilla, raisins and walnuts or almonds.
Pour into large greased loaf pan.
Sauce
- 1 cup brown sugar
- 2 cups boiling water
- 2 tablespoon butter
Combine all three ingredients in a bowl and whisk together. Pour over pudding mixture and bake at 350 degrees for 40 to 45 minutes.
Comments
Place loaf pan on cookie sheet so it doesn’t boil over in oven. Serve with whipped cream if desired.
