ORANGE BREAD PUDDING

Yield: Serves 4-5

A change of pace from the traditional recipe.

  • 2-1/2 slices stale bread, broken into small pieces
  • 2 cups hot milk
  • 1 large orange
  • 3/4 cup granulated sugar
  • 2 eggs, separated
  • 2 teaspoons vanilla
  • 1/4 cup powdered sugar
  • 1 teaspoon baking powder
  • Salt

Preheat oven to 350 degrees. Soak bread in milk for 10 minutes. Add grated rind from orange, granulated sugar, beaten egg yolks, and 1 teaspoon vanilla. Stir well, pour into greased 1-quart casserole, and bake for 45 minutes. Remove from oven. Beat egg whites until stiff with powdered sugar, baking powder, pinch of salt, and remaining teaspoon vanilla. Pour juice of orange over pudding, cover with meringue, and return to oven until lightly browned on top. Serve cool or chilled.
