Orange Bread

Yield: Makes 1 loaf.

This lovely, light bread makes delicious toast. —Big Moose Inn, Eagle Bay, New York

  • 6 tablespoons butter or margarine
  • 1-1/2 cups sugar
  • 2 eggs, beaten
  • 1/4 teaspoon orange extract
  • 1/4 teaspoon vanilla
  • 1-1/2 cups plus 1 tablespoon flour
  • 1-1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • Grated peel of 1 orange
  • 1/4 teaspoon ground cloves
  • Orange Glaze (recipe follows)

Preheat oven to 350°F. Cream together the butter and sugar. Add the beaten eggs, orange extract, and vanilla. Beat well. In a separate bowl sift together the flour, baking powder, and salt. Add to the creamed mixture alternately with the milk to form a smooth batter. Stir in the orange peel and cloves. Pour the batter into a greased 8-1/2x4-1/2-inch loaf pan and bake 1 hour. Remove from the oven and pour the glaze over the top. Cool 15 minutes in the pan and remove.
