Oven Baked Rice

Yield: Serves 6.
Here's the best way to cook rice. And please remember to use long-grain rice, not minute rice.
- 1-1/2 cups long-grain rice
- 1-1/2 teaspoons salt
- 1/8 teaspoon pepper
- 2 tablespoons butter
- 3-1/2 cups boiling water
Combine and stir all ingredients until the butter is melted. Cover and bake for 45 minutes in a 350 degree oven. Do not remove the lid while the rice is in the oven. When done, fluff lightly with fork.
