Poor Folk's Plum Pudding

Yield: Serves 6.
Serve this with a topping of whipped cream or foamy sauce.
- 1 cup flour
- 1/2 cup Indian meal (cornmeal)
- 1/3 cup maple syrup
- 1 cup cold water
- 1/2 cup each raisins and English currants
- 1 teaspoon baking soda, dissolved in 2 teaspoons hot water
- 1/2 teaspoon salt
Combine all ingredients and pour into well-greased top of double boiler. Cover and cook over boiling water for 2-1/2 hours, taking care that water boils continuously.
