Poor Folk's Plum Pudding

Puddings and Custards Recipes

Yield: Serves 6.

Serve this with a topping of whipped cream or foamy sauce.

  • 1 cup flour
  • 1/2 cup Indian meal (cornmeal)
  • 1/3 cup maple syrup
  • 1 cup cold water
  • 1/2 cup each raisins and English currants
  • 1 teaspoon baking soda, dissolved in 2 teaspoons hot water
  • 1/2 teaspoon salt

Combine all ingredients and pour into well-greased top of double boiler. Cover and cook over boiling water for 2-1/2 hours, taking care that water boils continuously.
