Potato Stuffing

Yield: Makes enough for an 8-pound bird.
A hearty stuffing to cook inside the turkey or prepare as a side dish. If used separately, bake in buttered dish at 350 degrees F for 30 minutes.
- 4 cups mashed potatoes
- 2 cups bread crumbs
- 1 cup minced onion
- 1/2 cup chopped celery
- 1/2 cup butter
- 2 eggs, well beaten
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon poultry seasoning, or 1/2 teaspoon sage and 1/2 teaspoon thyme
Combine potatoes and crumbs. Sauté onion and celery in butter until tender. Add to potato mixture. Add eggs and seasonings and mix well. Stuff loosely into turkey.
