Rice Torte (from northern Italy)

Miscellaneous Recipes
- 1 cup cooked rice
- 1/2 pound hamburger (optional)
- 3 green peppers, chopped
- 3 onions, chopped
- 2 eggs, lightly beaten
- 1 1O-ounce package spinach, cooked and drained
- bread crumbs to thicken, if needed
- oregano, garlic, salt, pepper, and thyme to taste
- 1/2 pound brick cheese, grated
- 1/2 cup Parmesan cheese, grated
Mix all ingredients together and spread in 9x13 pan in a layer about 1 inch thick. Bake at 350°F for 45 minutes. Cut into serving sizes. Tastes good hot or cold.
