Skewered Fresh Fruit with Lemon Ginger Cream

Yield: 12 kabobs
- 1/2 pineapple
- 3 kiwifruit
- 12 large strawberries
- 1/2 melon
- 12 skewers
- 1 cup low-fat sour cream
- 3 to 4 tablespoons sugar
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon chopped ginger
- fresh mint
Cut pineapple into 12 chunks. Peel kiwi and quarter. Stem strawberries. Peel and cut melon into 12 chunks. Skewer the fruit using one piece of each fruit per skewer.
In a small bowl, combine sour cream, sugar, lemon juice, lemon zest, and ginger. Mix well.
Serve skewers on a platter with bowl of lemon ginger cream and mint.

These were absolutely delicious! I made them for a staff appreciation breakfast at my daughter's high school, and they present very well. The Lemon Ginger Cream LOOKS very rich, so many people did not take it with their fruit. Boy, did they miss out on the best part! In the future, I will put a little note next to the cream telling them that it is actually not high in fat and then list what it has in it. That way they will put some on the skewers of fruit!
