Spiced Doughnuts

Yield: 80 doughnuts

To be served with apple cider.

  • 2 eggs, beaten
  • 1 cup sugar
  • 1 cup milk
  • 5 tablespoons shortening, melted
  • 4 cups flour
  • 4 teaspoons baking powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt

Add the sugar, milk, and shortening to the beaten eggs. Sift the flour before measuring, then resift it with the baking powder, spices, and salt. Combine the egg mixture with the flour mixture and stir until blended. Roll the dough one quarter inch thick and cut into desired shapes with a floured cutter. Fry at 860 degrees F to 870 degrees F for about 3 minutes, first on one side, then the other. Sprinkle with sugar.
