Spinacci Azurra (Blue Spinach)

Try this Italian twist for a healthy alternative to hot bacon dressing on a spinach salad.
- 2 large red onions, sliced
- 1 to 2 tablespoons olive oil
- fresh spinach (desired amount or about 3 cups)
- Gorgonzola cheese to taste
- raw sunflower seeds to taste
Steam or sauté red onions in olive oil over low heat. When translucent, remove cover and increase to medium heat; stir constantly until onions are dark but not burnt. Remove from oil, drain and set aside.
Wash and drain spinach and arrange in serving bowl. Sprinkle with Gorgonzola cheese and sunflower seeds to taste.
Reintroduce onions to a fresh, warm olive oil bath and pour over the spinach mixture, as you would a hot bacon dressing. If done right, the texture is that of bacon.
