Sweet Potato Puffs

Yield: Serves 6.
- 6 sweet potatoes
- 2 tablespoons butter
- 1/2 teaspoon salt
- 2 teaspoons brown sugar
- 1 tablespoon frozen orange juice concentrate
- 1 egg
- 2 tablespoons water
- 1/2 cup crushed cornflakes
Leave the sweet potatoes in their jackets, cover with boiling water and keep boiling until tender; about 25 minutes. Rice or mash, then add the next four ingredients and beat with a wire whisk until very light.
Form into balls and dip in a mixture of the egg and water, then roll in crushed cornflakes. Fry in a deep fryer preheated to 380 degrees F until golden brown.
