Yield: Makes ample hors d'oeuvre for 4.
This dip is really a delightful garlicky hummus. Augmented with other goodies -- tomatoes, cucumbers, and lettuce, for instance -- it also makes an excellent sandwich filling.
- 8 ounces tofu
- 3 tablespoons lemon or lime juice (usually 1 large lemon or lime)
- 1 clove garlic, sliced
- 4 tablespoons tahini (sesame flaste)
- 1/2 teaspoon salt
- Pepper to taste
- Chopped Italian parsley, for garnish
- Chopped onion, for garnish
Place first 6 ingredients in a blender or food processor and blend until smooth. To serve, place in a shallow bowl and sprinkle with chopped parsley and onion. Offer wedges of pita to scoop it up.
