Yield: Serves 2
Crispy, golden potato pancakes topped with mouth-watering filets of beef and accompanied by spicy apple chips. --Hanover Inn, Hanover, New Hampshire
POTATO PANCAKES
- 2 medium raw potatoes, grated and squeezed dry
- 1 small onion, grated
- Salt and pepper
- 1 egg
- Flour
- Butter or oil for frying
Mix together potatoes, onion, seasonings, and egg. Add enough flour to bind and make a moist batter. Spoon into frying pan and fry to golden brown on both sides.
CINNAMON APPLE CHIPS
- 2 cups apple slices
- 1/4 cup sugar
- 1 tablespoon cinnamon
- Butter
Toss apples with sugar and cinnamon and sauté in butter until tender.
TOURNEDOS
- 4 tenderloin beef filets (3 ounces each)
- Butter
Sauté beef in butter to desired doneness.
To serve: Arrange potato pancakes on platter and set tournedos on top with apple chips in center of platter. Serve with sour cream.
