UFO Social Club Barbecue Sauce

This is named after Andy’s former barbecue team, the UFO Social Club, which took its name from Harpoon Brewery’s UFO Hefeweizen brew. Andy suggests you “slather it on right before serving.”
- 2 tablespoons vegetable oil
- 1 large yellow onion, chopped
- 1 14-1/2-ounce can tomato paste
- 1 14-1/2-ounce can tomatoes in juice
- 1/2 cup white wine vinegar
- 2 tablespoons dark-brown sugar
- 2 tablespoons sugar
- 1 tablespoon kosher or sea salt
- 1 tablespoon freshly ground black pepper
- 1 tablespoon paprika
- 1 tablespoon chile powder
- 2 tablespoons molasses
- 1/4 cup Basic Barbecue Rub
- 1/4 cup orange juice
- 4 tablespoons yellow mustard
- 1 12-ounce bottle dark beer
In a large heavy-bottomed saucepan, heat the oil over medium-high heat, then sauté the onion, stirring frequently until golden brown, about 10 minutes. Add the remaining ingredients and bring to a boil. Reduce heat to very low and simmer 2 hours, stirring occasionally, scraping the bottom to prevent scorching.
Transfer the barbecue sauce to a food processor or blender and puree (in batches, if necessary).
