Freda Arkin’s Curry Freezer Cookies

Yield: Makes about 4 dozen

Ingredients:

  • 1 cup butter
  • 2 cups brown sugar
  • 2 teaspoons vanilla
  • 2 eggs, beaten
  • 1-1/2 cups broken walnuts
  • 3 cups flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons curry powder

Instructions:

Cream butter and sugar; add vanilla and eggs, then nuts. Add sifted dry ingredients and mix well. Form into 2 to 4 rolls, wrap in waxed paper, and freeze. While still frozen, cut into thin slices and bake on ungreased cookie sheets at 350 degrees for about 12 minutes. Let cool for about 5 minutes, then remove and cool on newspaper covered with paper toweling.
