Yield: A pound serves 4

Ingredients:

  • 1 pound green beans

Instructions:

Remove ends of beans and strings if any. If they are small, leave them whole; otherwise, snap them in 1-inch lengths or French-cut them in long thin strips. Wash the beans, and cook them in a small amount of rapidly boiling salted water until just tender and still green, 10 or 15 minutes depending upon their size. Serve at once with butter.
