Yield: Serves 12

A refreshing appetizer for lunch or dinner or increase the amounts and serve as a party punch. --The Rutledge Inn, Fairlee, Vermont

Ingredients:

  • 1 teaspoon cut up crystallized ginger
  • 1/4 cup crushed pineapple
  • 1/3 cup orange sections
  • 1/3 cup canned peaches
  • 1/3 cup sugar
  • 1/4 cup lemon juice
  • Ginger ale

Instructions:

Mix ginger, pineapple, orange sections, and peaches in blender until smooth. Combine sugar and lemon juice and add to ginger mixture, stirring until well mixed. At serving time put 2 tablespoons in a 10-ounce glass, fill with chilled ginger ale, and present with straws.
