This recipe for gluten free banana nut muffins, which comes from the LimeRock Inn in Rockland, Maine, earns an A+ from our readers.
Heat oven to 325 degrees. In a medium bowl, mash banana. Add melted butter, honey, eggs, flour, and baking soda. Stir until well blended. Distribute batter evenly into 6 large muffin wells. Bake for 35 minutes until muffins are cooked through and golden brown. Remove from the oven and cool before serving.
