Goat Cheese and Roasted Red Peppers Dip

Ingredients:

  • 8 ounces fresh goat cheese
  • 3 scallions, roughly chopped
  • 4 roasted red peppers
  • 2 tablespoons chopped basil, plus extra whole leaves for garnish
  • 1 large or 2 small garlic cloves, roughly chopped
  • 2 tablespoons (approx.) extra-virgin olive oil
  • Kosher or sea salt
  • Freshly ground black pepper

Instructions:

In the bowl of a food processor, combine ingredients until smooth. Adjust seasoning. Transfer to a serving bowl and garnish with ribbons of basil.
