- 4 c old-fashioned oats
- 1 c coconut
- 1/4 c brown sugar
- 1/4 c honey
- 1/4 c canola oil
- 1 t cinnamon
- 1 t vanilla
- 1/2 c chunky peanut butter, if desired
Instructions:Combine oats and coconut in large bowl and set aside. To this mixture fruit or nuts may be added; we like raisins, craisins, pecans, flax seeds or sunflower seeds.
On stove bring to boil: sugar, honey, oil and cinnamon. Remove from heat and add vanilla. (I also add 1/2 c chunky peanut butter at this point.)
Pour liquid over dry mixture and combine well. Spread on ungreased cookie sheet and bake at 350 degr. for 15 to 20 minutes. Let cool and store in airtight container.
