From the Old Red Inn & Cottages, North Conway, NH.

Ingredients:

  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • 2-1/4 cups of flour
  • 1/4 teaspoon salt
  • 3/4 cup finely chopped almonds
  • 1/3 cup powdered sugar to roll cookies in when baked

Instructions:

Beat butter, powdered sugar, and the vanilla in a large bowl. Stir in flour and salt and almonds.
Shape dough into 1-inch balls place about 2 inches apart on ungreased cookie sheet. Bake at 400 degrees for 8 to 9 minutes. Immediately remove from cookie sheet and roll in powdered sugar. Cool completely on wire rack. Roll in powdered sugar again.
